We are very excited to bring this coffee back into our lineup for a fifth year! This coffee is sweet and complex with berries and a chocolate finish.
Finca Idolia is a subsection of a farm called Finca Santa Ana. Santa Ana is a huge farm, so they divided it up into four sections, Finca Santa Ana, Finca Idolia, Cielito, and Amatillo. The farm is run by Fernando Diaz. Fernando is truly committed to this farm and seeing it improve. He has massively overhauled his farm with new drying techniques, cherry sorting, new varietals everywhere, and massive amounts of data logging and lot sorting. Yet, with all of these large changes, Fernando seems pretty relaxed about everything. Whenever you compliment him or say anything remotely positive about his coffee practices he responds with a simple shrug and walks away. I think he secretly likes to hear that stuff, but he doesn’t show it.
