Finca Huixoc is the first farm of Huehuetenango and the owner, Alejandro, is a 3rd generation farmer. Huixoc has recently been through massive restoration at every level. New plants, new farm managers, completely refurbished mill and patio. The farm was founded by Jose Olivia Chavez in the 1940’s. The name Huixoc is the Mayan word for 'spring water'.
