Sourced from a group of 32 neighboring producers in the municipalities of La Union and
Cartago, Las Frutas undergoes an extended, double fermentation to achieve a fruit-forward flavor profile while maintaining clarity and cleanliness in the cup. This lot is composed of only Caturra trees planted above 1,800 MASL. An initial 18-hour fermentation is done with the cherries soaking intact, skin and mucilage still on the seed. The seeds are then milled and fully washed to undergo a second 18-hour fermentation.
