This anaerobic natural process coffee is something very special. Producer Susana Cajiao is a doctorate level agricultural engineer with a rich family history in coffee. This is the first time her coffee has been made available in the U.S., and we are incredibly proud to feature it. Expect a cup that is vibrant, tropical, and punchy.

Susana is a third-generation coffee farmer. In the 1950s, her grandfather was responsible for introducing the crop in her community when he loaded adult coffee trees onto a mule from a neighboring town and led it through the mountain paths to his community in Piendamó. Susana left the coffee farm to pursue her dreams of becoming a professional, graduating college as an agricultural engineer, which led her to teach high school chemistry to students in a remote conflict-affected community. The pandemic prompted the temporary closing of the rural school, and she seized the opportunity to move back to Piendamó to live with her brothers, who were fully involved in specialty coffee production. Susana used her time at home to reflect upon her career. She enrolled in a doctoral program where she researched ways to use organic waste produced on farms to create products used in everyday life while reconnecting with her brothers and the coffee trees on the family farm. In addition to completing her doctoral research, she enrolled in a barista training course that trains farmers on physical and sensorial analysis, roasting, and barismo at Colombia’s National Learning Service (SENA) in Popayán. She became curious about the chemistry behind coffee production and took a short course on microbiology in controlled fermentation. She applied her training as an agriculture engineer to processing this natural lot. Although Susana is passionate about learning and teaching, she hopes to use coffee as a tool to teach students about chemistry. This is the first time Susana’s coffee has been available in the USA.
