Finca Huixoc is a celebrated award winning farm located in Huehuetenango, Guatemala. We’re incredibly excited to offer this washed process Pacamara variety at Coffea for the first time. In the cup, look for tasting notes of citrus, floral, caramelized sugar.

Finca Huixoc was founded in 1947 by Jose Olivio Chavez, the grandfather of Alejandro Solís, current owner of Finca Huixoc and Finca El Injertal. Finca Huixoc was one of the first coffee farms established in the remote area of Huehuetenango, a region that has since become well known for producing high quality coffees. “Huehue” is blessed with high altitudes, specific rain patterns, and a wide variety of micro-climates due to its mountainous terrain. When Finca Huixoc was founded, mountains were being blown up to build the roads that would bring in coffee processing machinery. The same machines have been running and processing coffee at the farm up until our current day. Alejandro continues to be a leader in the coffee world. His farms are equipped with climate stations and his data collection provides tools to both Guatemala’s Anacafe and to the UK-based Climate Edge firm, advancing the availability of climate change data to help better understand the changing conditions producers are facing. Huixoc is an indigenous Mayan word meaning “spring water”, signifying the importance of the spring water sources on the farm, which provide hydropower for the wet mill and water for processing coffee.
