Coffee is integral to the way of life in Gedeb Chelchele. The community takes immense pride in its coffee heritage, as it should; coffees from Gedeb are known for their high quality and desirable flavor profiles. This is, after all, among the regions in Ethiopia considered by many to be one of the birthplaces of coffee. For the people of Chelchele, coffee is not just a source of income, it is central to their sense of community and togetherness. Many families in the region rely on coffee farming as their primary source of income, and members of the community often come together during harvest to work together hand picking cherries. After the harvesting stage, this coffee underwent anaerobic processing, where the coffee cherries were sealed in a pressurized, oxygen-free environment, allowing for precise control over sugar level, temperature, and pressure, to produce the best flavor results. After 7-10 days in the fermentation tank, the coffee was transferred to drying beds to halt the fermentation process and begin a slow drying process of 15-20 days with shade on elevated African drying beds, until reaching a moisture content of 11%. This coffee is not your average morning cup, but something very special, and we hope you enjoy brewing, sipping, and sharing.
