High above the southern shore of stunning and mystical Lake Atitlan, just beyond the town of San Lucas Toliman, sits Finca Patzibir (a Kaqchikel word meaning “where the tree lives”). This beautiful farm resides in a microclimate replete with cloud cover and limited direct sunlight. These conditions give way to a soft, chocolatey, sweet and slightly nutty cup profile often found in farms from around “the lake.”
